New Potato and Radish Salad

Ingredients
- 250g / 9 oz new potatoes, cleaned
- 3 tablespoons olive oil
- 1 tablespoons lemon juice
- Salt and Pepper
- 2 tablespoons chopped fresh herbs, e.g. chives, mint, parsley
- 5 large radishes, thinly sliced
Method
- Cut any large potatoes in half. Place all the potatoes in a saucepan and cover with cold water. Bring to the boil and simmer for 10-15 minutes until tender.
- Drain and add the lemon juice, olive oil, salt and pepper. Leave to cool before stirring in the herbs followed by the radishes.
- Tasty served with meat or fish as well as with other salads.
