Marmalade Bread & Butter Pudding
Serves 4
Ingredients
- 6 slices of white bread, crusts removed,
- Soft butter,
- Good quality marmalade,
- 3 tablespoons sultanas,
- 30g/1oz caster sugar,
- 2 small eggs,
- 350 ml/13 fl oz combination of double cream &full fat milk (½ and ½ or just milk for a less rich pudding).
Method
- Butter the bread and spread with marmalade. Cut into triangles.
- Grease 4 large ramekins before arranging the triangles in each, sprinkling sultanas in between each layer of bread (there will be several layers).
- To make the custard mixture; whisk the eggs & sugar together until pale. Add the cream & milk, stirring well.
- Pour the custard over the bread; it should come about halfway up the ramekin.
- Leave to soak for a minimum of half an hour.
- Preheat the oven to 190°C / gas mark 5. Bake for 25-35 minutes until the custard is set and the top is golden brown.
- Serve hot with cream.
