Macaroni Cheese with ham, leek and mushrooms
Serves 4
Ingredients
- 400g macaroni pasta,
- 3 eggs,
- 45g/ 1½oz butter,
- 45g/ 1½oz plain flour,
- 425ml/ ¾ pint hot milk,
- Salt & pepper,
- 110g/4oz mature cheddar cheese plus extra for sprinkling on top,
- 2 tablespoons mustard,
- Oil,
- 1 small leek, sliced,
- 12 mushrooms, sliced,
- 4 slices ham, cubed.
Method
- Cook the pasta according to the manufacturer’s instructions. Place the eggs in the pan along with the pasta and cook until they are hard boiled.
- Drain, setting the pasta aside and peel the hard boiled eggs. Chop the eggs into small pieces and add to the pasta.
- Melt the butter in a pan and stir in the flour. Whisk in small volumes of milk waiting for the sauce to boil before adding the next volume of milk. When all the milk has been whisked in, stir in the cheese and mustard and then season with salt & pepper.
- While you are making the sauce heat the oil in a frying pan and cook the leeks and mushrooms until soft, adding the ham a couple of minutes before the end. Add the sauce & vegetable mix to the pasta and mix well.
- Spoon into an ovenproof dish, sprinkle cheese over the top and grill until golden brown.
