Jam Tarts
Ingredients
- 85g/3oz plain flour
- 20g/ ¾oz icing sugar
- 55g/2oz butter
- 1 egg yolk
- ½ - 1 tablespoon cold water
- Homemade jam or good quality shop bought
Method
- Place the flour & sugar in a large bowl and mix together.
- Cut the butter into small pieces and toss in the flour.
- Using your fingertips, lightly rub the butter into the flour to form fine
breadcrumbs.
- Add the egg yolk and mix with a knife. Add a little water (if needed)
to bring together to a dough.
- Place in a bag or cling film and refrigerate for half an hour.
- Preheat the oven to 190°C/ gas mark 5.
- Roll the pastry out to the thickness of a pound coin. Using a 6 ½ cm
round cutter, cut out circles. Put one in each hole of a bun tin.
- Into each circle, spoon a couple of heaped teaspoons of jam. If you have
any pastry left, cut out some shapes such as hearts and place on top
of the jam.
- Bake in the oven for 15-20 mins, until the pastry is golden brown.
- Cool on a wire rack.
- Store in an airtight container in a cool dry place.
