Elderflower Cordial
Ingredients
- 7 elderflowers, washed-choose only the ones that smell sweet
- 575ml / 1 pt water
- 450g / 1lb caster sugar
- 2 tsp cider vinegar
- 1 lemon, grated zest & juice
Method
- In a saucepan, gently bring the water and sugar to the boil, stirring until the sugar is dissolved.
- Place the elderflowers in a bowl and pour the sugar mixture over them. Stir in the vinegar, lemon juice and zest before covering. Leave to infuse for 24 hours.
- Sterilise some glass bottles or jars by washing well and then rinsing with boiling hot water.
- Leave to drain before heating in an oven at 160°C / gas mark 3 for 10 mins or until thoroughly dry.
- Strain the liquid through muslin and bottle into the sterilised jars or bottles.
The cordial will keep for a few months in the fridge.
To drink: dilute about 1 part cordial to 10 parts water but depends on individual tastes
