Cidered Pork & Apple Casserole
Serves 4
Ingredients
- Oil,
- 675g/1lb8oz lean pork, cubed,
- 225g/8oz onions, sliced,
- 30g/1oz plain flour,
- 180ml/? pint dry cider,
- A little grated nutmeg,
- Salt & Pepper,
- 2 large cooking apples, peeled, cored & sliced,
- 175g/6oz cheddar cheese, grated.
Method
- Preheat the oven to gas mark 4 / 180°C.
- Heat the oil in a pan. Brown the pork quickly, along with the onions and then place in a casserole dish.
- Sprinkle the flour over the juices left in the pan, stir, then gradually add the cider and seasoning. Cook until thickened, stirring constantly, then pour over the meat in the casserole dish.
- Cover with sliced apple, put the lid on and cook for an hour.
- Remove the lid, sprinkle on the grated cheese, turn up the oven to gas mark 6 / 200°C and cook uncovered for a further 30 mins until golden brown.
