Blue Cheese Pasta with Wild Garlic
Serves 2.
Ingredients
- 200g/7oz penne pasta,
- 9 medium mushrooms, sliced,
- Large handful of wild garlic,
- Knob of butter,
- 100g/3 ½oz stilton or binham blue cheese,
- 4 tablespoons double cream,
- salt & pepper.
Method
- Cook the pasta according to the instructions on the packet.
- Meanwhile heat the butter in a frying pan and cook the mushrooms until starting to colour.
- Place the blue cheese and cream in a bowl and heat gently in the microwave until the cheese has melted into the cream (approx. 2-3 mins).
- When the pasta is cooked, drain and return to the saucepan, adding the wild garlic. Stir so that the heat from the pasta wilts the garlic.
- Stir in the sauce & mushrooms adding salt & pepper to taste.
