Banana Cake
Ingredients
- 85g butter,
- 110g light muscovado sugar (another sugar such as granulated or caster
can be used if you prefer),
- 1 large ripe fairtrade banana,
- ¼ teaspoon vanilla extract,
- 1 egg,
- 140g self raising flour,
- ¼ teaspoon bicarbonate of soda,
- ½ teaspoon cinnamon.
Method
- Preheat the oven to 160°C / gas mark 3. Grease a 1lb loaf tin and
line with greaseproof paper or use a loaf tin liner instead.
- In a bowl place the butter and sugar. Microwave on high until melted,
checking every 30 seconds and stirring if necessary. Leave to cool.
- Mash the banana with the vanilla extract.
- Stir the banana and egg into the melted mixture.
- Add the flour, bicarbonate of soda & cinnamon and mix well.
- Pour into the tin and bake in the oven for approx. 45-60 mins, until golden
brown and when a skewer is inserted into the centre of the cake it
comes out clean (with no raw cake mixture on it).
- Cool on a wire rack. Store in an airtight container.
