Apple and Quince Pie
Ingredients
- 6oz/170g Plain flour,
- 4oz/110g Butter,
- 1 ½ oz/45g Icing Sugar,
- Zest of 1 orange – Finely grated,
- 1 medium egg yolk,
- 2 large/3 medium Bramley apples- peeled, cored and chopped into 1 ½ cm
pieces,
- 2 Quinces- cored and chopped into 1 ½ cm pieces,
- 2 ½ oz/70g Caster sugar,
- ½ teaspoon allspice.
Method
- To Make the Pastry
- Place the flour, butter, icing sugar and zest in a magimix. Blend until
the mixture resembles fine bread crumbs (this can also be done by hand using
the rubbing in method).
- Add the egg yolk and mix until just coming together.
- Form a ball and place in the fridge for half an hour.
- Pre-heat the oven to 190°C/Gas Mark 5.
- In a bowl toss together the fruit, caster sugar and all spice.
- Place in a 9 inch/23 cm round dish or pie tin.
- Bake in the oven for 10 minutes to part cook the fruit and remove.
- Roll out the pastry to pound coin thickness and place over the top of
the fruit. Cut round the outside of the dish to remove any excess. Make
a small hole in top to allow the steam to escape.
- Bake for 20-25 minutes until golden brown.
- Serve warm or hot with cream or custard.
