Apple & Blackberry Crumble
Serves 4
Crumble Topping
- 110g/4oz plain flour,
- 55g/2oz butter,
- 55g/2oz caster sugar,
- ½ tablespoon polenta.
Fruit Mixture
- 3 medium or 2 large cooking apples, peeled, cored & chopped into 2cm cubes,
- Large handful of blackberries,
- 1 tablespoon water,
- 3½ tablespoons sugar or more if desired.
Method
- Rub the flour and butter together until it resembles breadcrumbs. Stir in the sugar and polenta.
- Place the mixture on a large baking tray and chill for an hour in the fridge.
- After chilling, preheat the oven to 180?c / gas mark 4 and cook until golden brown (approx 15-20 mins) turning the crumble over occasionally so it cooks evenly.
- Place all the ingredients for the fruit mixture in a saucepan. Cover and simmer on a low to medium heat until the fruit is tender (approx 8-12 mins). This can also be done in the microwave if you prefer.
- Drain off any excess fluid. Add more sugar if needed before dividing between 4 small dishes.
- Sprinkle the crumble mixture over the top and serve.
- If there is any spare crumble mix this can be stored in an airtight container for next time.
